Method
Boil good sized potatoes for 10 minutes. Peel, grate coarsely and form into a large flat cake. Saute in butter until brown and crusty on the bottom. Invert the pan on a plate, add more butter and slip the uncooked side into the pan. Cook till crusted on the other side. Add salt and pepper.
