Ingredients
185 g (6 oz) Cracked Wheat
3 tablespoons finely chopped Onion
Salt And Pepper
1 1/4 cups finely chopped Parsley
2 tablespoons finely chopped fresh Mint
1/3 cup Olive Oil
5 tablespoons Lemon Juice
2 medium sized firm Tomatoes
Method
Soak the cracked wheat for half an hour. Drain and squeeze out all the water. Spread on a cloth to dry. Wash the mint and parsley and dry thoroughly before chopping.
Mix the cracked wheat with onion, salt and pepper, parsley and mint. Add oil, lemon juice, and chopped tomatoes. Toss lightly. Adjust seasonings, adding more oil or lemon juice as required. It should have a distinctly lemon flavour.
Spoon into a bowl lined with crisp lettuce leaves and garnish with tomato slices or wedges and sliced cucumber.
