Radicchio and Mushrooms with Castagnaccio
Preamble
Castagnaccio is a savoury 'tart' made with chestut flour
Ingredients
400 grams chestnut flour
2 eggs, beaten
30 grams parmesan, grated
30 ml olive oil
250 ml water
salt and pepper
Method
Combine flour with the eggs and parmesan
Add the oil and mix well and then gradually add the water to make a fluid and smooth dough
Heat oven to 180 o
Grease a 24 cm springform tin and fill with the dough
Bake for 50 minutes
Radicchio and mushrooms
Ingredients
1 large radicchio and two small, cleaned
oil and vinegar dressing (normally 2/3 olive oil, 1/3 red wine vinegar)
10 grams chestnut honey
400 grams pine mushrooms or oyster mushrooms, cleaned
400 grams Montasio cheese, cut into slivers
Method
Cut radicchio into pieces and toss with the Italian dressing and a dash of chestnut honey. Let stand for 30 minutes
Grill the mushrooms
Combine the radicchio with the mushrooms and slivers of cheese and serve with a small slice of castagnaccio
