Potato Croquettes
Preamble
These are very good as a vegetable accompaniment for various meats and fish
Ingredients
1 kg potatoes
5 eggs
100 grams parmesan, grated
100 grams fresh bread, grated coarsley
plain flour
1 litre vegetable oil for frying
Method
Wash the potatoes and boil them
Peel and mash well, seasoning with grated parmesan
Beat two eggs into the potato mash to form a paste.
Form the paste into nut size balls
Whisk three eggs really well
Roll the balls in flour then dip in the whisked egg and then in the grated crumbs
Fry in lots of oil till the balls get a good colour
Drain on paper for a couple of minutes
Serve very hot
