Ingredients
1 Cauliflower cut into flowerets blanched
20 ml Vinegar
60 ml Olive Oil
6 Anchovy Fillets
1 tbsp Capers roughly chopped
12 Black Olives pitted and roughly chopped
salt
freshly ground Black Pepper
Method
Drop the cauliflower pieces into fast boiling salted water and cook briefly. They must remain crunchy. Strain and drop into cold water to stop the cooking process
Mix all the other ingredients together, add the cauliflower and toss.
Serve at room temperature.
