Cauliflower with Cheese Sauce

Preamble
This is an old fashioned but always successful way of serving cauliflower. Some recipes suggest finishing the top with cheese but then the cheese will get crisp and dry and with cauliflower the flavour is better when the cheese is mixed through the sauce.

Ingredients
1 head of cauliflower
water
salt

100 grams parmesan, grated

Method

Make bechamel sauce and incorporate the parmesan

break cauliflower into flowerets and boil in salted water

drain well and place in a baking dish

cover with the sauce and bake in a hot oven for about 10 minutes or till the top is slightly browned
