Gujerati Vegetable Curry

Ingredients
2 tablespoons Ghee
1 lb par-cooked Potatoes
1 lb Peas
1/2 lb French Beans sliced
1 Onion chopped
1/2 teaspoon Cumin Powder
1 teaspoon Coriander Powder
1 teaspoon Turmeric Powder
1 teaspoon Paprika or Chilli Powder
2 teaspoons Salt
1 teaspoon soft Brown Sugar

Method
Heat ghee and fry the potatoes, peas and beans. Remove and lightly fry the onion. Add all the spices and fry for a few minutes. Add the vegetables, salt, sugar and half a cup of hot water. Cover and simmer till all the vegetables are cooked.
