Tarte Aux Petits Pois
Ingredients
8 oz Plain Flour
Salt
5 oz Butter
1 Egg
Cold Water
6 oz Streaky Bacon
1 clove Garlic
14 oz Peas
2 Eggs
Black Pepper
Salt
1/4 pint Milk
Chopped Parsley
Method
Sift the flour and salt into a mixing bowl. Add butter cut into small pieces and rub in finely. Beat the egg with a teaspoon of cold water and mix well to form a firm smooth paste. Leave in a cool place for a short while before use. Line an 8-9 inch fluted tin with the prepared pastry. Trim off surplus, and decorate the edges with a fork.
Trim the bacon, cut into small pieces, fry gently with crushed garlic for few minutes. Drain off fat and arrange over base of pastry. Top with well drained peas. Whisk eggs with pepper, salt and milk then pour over the other ingredients. Place just above centre of mod. hot oven (375 degrees) - bake for 40-45 minutes until pastry is cooked and filling set. Serve hot or cold sprinkled with parsley.
