Champignons A La Bordelaise
Ingredients
Field Mushrooms
Oil
Salt And Pepper
2 tablespoons Parsley chopped
Garlic or Shallots
2 tablespoons Breadcrumbs
Method
Swiss browns or field mushrooms are best.
Clean and slice them, moisten with oil and season with salt and pepper. Leave to matinate for 1-2 hours.
Drain. Then saute gently in fresh oil for 5 minutes. Then add, per half pound of mushrooms, 2 tablespoons of chopped parsley and a little chopped garlic (or you can use shalots) and 2 tablespoons if breadcrumbs.
Cook until the oil is absorbed.
