Artichoke Hearts And Peas

Ingredients
1 packet frozen Artichoke Hearts
3 tablespoons Butter
2 cups Green Peas
1/2 cup Water
1 Bouquet Garni (Parsley Stalks Thyme Bay Leaf)
1 pinch Sugar
Salt And Pepper

Method
Thaw a package of frozen artichokes (if available use fresh), cut them in half lengthwise, and pat them dry in a cloth. Saute them slowly in 2 tablespoons of butter until they are lightly browned, turning them several times. Add 2 cups of green peas, 1/2 cup of water, 1 tablespoon of butter, a bouquet garni, a pinch of sugar, and salt and pepper. Cover and simmer together over a very low flame for 25 minutes, or until the peas are tender and the liquid has almost evaporated.
