Ingredients
1 lb Spinach
Butter
2 or 3 tablespoons boiled Cream
2 hard-boiled Eggs
Method
Clean 1 lb of spinach very carefully and drain it well. Cook it, without water, for about 5 minutes, adding a little salt. Squeeze the water out of it, put it into a fireproof dish in which a good lump of butter has been melted; heat it very gently in the oven. When it is hot, add 2 or 3 tablespoons of boiled cream and 2 sliced hard-boiled eggs and cook for another minute or two.
Serve very hot, as a separate vegetable course. 1 lb of spinach is enough for two people.
