Pineapple Served With Ham


Preamble
"Pineapple is also excellent as an accompaniment to ham and other fat meats. A large tin of pineapple slices will serve a small family twice."

Ingredients
1 large tin Pineapple slices
Flour
Clarified Fat


Method
Drain the pineapple slices free of juice (reserving the juice for adding to fruit drinks), and when dry, sprinkle lightly with flour from a flour dredger. Heat a little butter in the frying pan (making sure that it does not hold the flavour of any other food) and put the slices to fry till golden brown on both sides. Drain on greaseproof paper and serve at once hot.
