Ingredients
2-3 Avocados
1 finely chopped Onion
3 rashers Bacon
Parsley
1 tablespoon Lemon Juice
Salt And Pepper
Slices of Toast
Method
Remove skin from avocados, mash flesh in small basin. Add lemon juice and onion, season well with salt and pepper. Cut bacon rashers into dice, saute lightly in own fat. Drain, add to avocado mixture. Serve piping hot on toast slices garnished with parsley.
