Ingredients
Eggplant
Mushrooms
Onions
Oil
Fresh Herbs
Tomato Sauce or Paste
Breadcrumbs
Egg/Cream Custard
Cheese
Method
Cut eggplant in half.
Cut round edges and score flesh in squares.
Bake till just soft.
Scoop out flesh, keeping skins intact.
Weigh out x 2 flesh to diced mushrooms.
Weigh out x 1/2 flesh to chopped onions.
Sweat onions in oil.
Mix in food processor with fresh herbs and tomato sauce or paste.
Bind mixture with breadcrumbs.
Make egg/cream custard. Combine with eggplant mixture.
Top with breadcrumbs and cheese.
Brown under grill or in oven
