Cabbage with Carrots and Pancetta


Method

In a large saucepan fry the pancetta briskly in the oil until crisp - about 2 minutes.

Add the cabbage and carrot. Turn up the heat. Using tongs or a spoon turn the cabbage over lifting it from the bottom. Don't let it burn. Cook until the cabbage and carrots are soft about 15 minutes. Serve as a vegetable accompaniment.
