Swiss Barley Soup

Ingredients
3 1/2 oz Pearl Barley
1 lb Smoked Ham Hocks
1 teaspoon Salt
Freshly ground Black Pepper
4 pints cold Water
3 1/2 oz finely chopped Leeks
2 1/4 oz finely chopped Celery
2 oz finely chopped Onion
1 peeled finely chopped Potato
3/8 pint Double Cream

Method

Put barley, hocks, salt, pepper and water into saucepan and bring to the boil.

Reduced heat, cover pan and simmer 45 minutes. Add leeks, celery, onions and potato and continue to simmer till vegetables are tender.

Remove hocks.

Finish with cream and seasonings.
