Assida

Preamble
Assida is a Moroccan soup, translates as Bean and Almond Soup.

Ingredients
1/4 lb white Haricot Beans
Chicken Stock
1/2 lb ground Almonds
2 chopped Leeks white only
3 cloves Garlic
White Pepper
1/2 cup White Wine
White Sugar
Skinned Almond Slivers

Method

Soak the white haricot beans overnight and cook in chicken stock till tender. Do not salt.

Add ground almonds and chopped leeks (white parts only), the garlic pounded, white pepper, white wine and sugar. Cook till able to pass through a sieve.

Serve cold - garnished with skinned almond slivers.
