Cold Cucumber Soup

Preamble
Very refreshing in hot weather.

Ingredients
1/4 pint top Milk
1 carton Yoghurt
1 large Cucumber peeled and cut into small dice
1 clove Garlic finely chopped
1 teaspoon ground Coriander
1 rounded teaspoon dried or I dessertspoon fresh chopped Mint
Salt And Pepper
Sprigs of fresh Mint

Method
Beat milk and yoghurt together in a bowl until creamy, add the cucumber, garlic, coriander, mint, salt and pepper. Chill in refrigerator until very cold. Serve in iced soup plates with a sprig of mint on each.
