Ingredients
6 small Cucumbers
Salt
3 cloves Garlic
1 litre Yoghurt (sheeps)
White Pepper
1 bunch Mint finely chopped
Method
peel and dice the cucumbers and sprinkle with salt, leave for 1 hour in a colander to drain.
Crush the garlic with a little salt
Mix a few spoons of the yoghurt with the garlic, season
Combine with the well drained cucumber (for a smoother texture, cucumber can be blended first)
Add mint and chill well
Serve in chilled bowls with a fresh mint leaf garnish
Remarks
You can experiment with othe herbs in this soup. Mint is the most refreshing, dill is also good but stronger, so use less.
