Shallot And Cheese Soup

Ingredients
1 bunch Spring Onions
2-3 oz Butter
Chicken Stock
Grated Emmental
Bread buttered and crisped in the oven

Method

Chop onions finely. Simmer in butter for 15 minutes. Add stock. Cook 30 minutes. Pour into bowls - place toast and cheese on top.

Put under grill to brown.
