Ingredients
8 1/2 lb Spinach
4 chopped Onions
8 oz Butter
8 oz Flour
10 pints Chicken Stock
Salt
Pepper
Nutmeg
4 pints Milk
Method
Wash spinach, drop into boiling water for 5 minutes.
Drain.
Cook onion in butter till soft and yellow.
Add flour.
Cook till blonde roux.
Add stock and spinach.
Season
Stir till boiling.
Simmer 20 minutes.
Add milk.
Garnish with lemon slices.
