Zucchini or Cucumber Soup

Ingredients
3 Cucumbers about 8 inches
Or 3 Zucchini 8 inches long
1/2 cup minced Shallots
3 tablespoons Butter
6 cups light Chicken Stock
1 1/2 teaspoons Wine Vinegar
Pinch dried Dill Weed
4 tablespoons quick cooking Farina (semolina)
Salt
White Pepper
1 cup Sour Cream
Freshly chopped Parsley or Dill

Method

Peel the cucumbers. Dont peel the zucchini. Cut into half inch chunks. Cook shallots slowly in butter till tender. Add cucumber or zucchini, chicken stock, vinegar and dill. Bring to the boil, stir in farina or semolina.

Simmer partially covered for 20-25 minutes. Puree. Thin out with stock if necessary. Season with salt and pepper.

Bring to the simmer and beat in 1/2 cup sour cream.

Oversalt slightly, let cool, stirring occasionally. Cover and chill. Add dollop of sour cream to each bowl and float wafer thin fresh cucumber slices or fresh parsley or dill. Omit slices of zucchini.
