Curried Apple Soup
Ingredients
2 teaspoons Butter
1 chopped Onion
1 pint Chicken Stock
1 teaspoon Curry Powder
1 teaspoon Corn Flour
2 Egg Yolks
1/4 pint Double Cream
Juice of 1/2 Lemon
Watercress Leaves
Apples
Method
Melt butter, add onion and cook (not brown). Stir in stock and curry powder, add flour mixed with a little water. Bring to the boil and simmer for 8 minutes. Add egg yolks to hot cream and stir into soup. Remove from the fire immediately and put into a blender with a peeled cored apple. Blend. Season with salt and pepper.
Chill - peel, core and dice another apple and marinate in lemon juice. Just before serving, stir in apple and watercress leaves.
