Onions
Cauliflower
Chicken Stock
White Pepper
Salt
Nutmeg
Cream
Method
Sweat the onions then add cauliflower in the form of flowerets. Add chicken stock after 5 minutes, cook until very tender. Then strain off excess stock and puree the cauliflower and onions. If too thick add more stock. Season with white pepper, salt and nutmeg. Mix in the cream.
