Salade De Poulet Boulestin

Preamble
For left over chicken deluxe:

Ingredients
Rice
Wine Vinegar
Olive Oil
Salt
Pepper
Mustard
Green Pepper
Sweet Pimento
Cooked Chicken
Mayonnaise
Hard boiled Eggs
Tarragon
Chives
Parsley

Method
Season freshly boiled rice while it is still hot with a French dressing made of 1 part wine vinegar, 3 parts olive oil, salt, pepper and a little prepared mustard. Mix in a little green pepper and sweet pimento, both minced and cool the rice thoroughly. Just before serving, put the rice in a glass bowl, cover it with diced cooked chicken, and cover the chicken with homemade mayonnaise spiced with a little mustard. Decorate the salad with a circle of hard boiled egg slices and sprinkle it with chopped fresh tarragon, chives and parsley. Mix the salade de poulet thoroughly at the table. There should be plenty of French dressing and not too much mayonnaise.
