Poulet Papillote
Ingredients
1 small Chicken
4 small white Onions
4 small Potatoes
8 small Mushrooms
1 glass dry white Wine
1/4 pint cultured Sour Cream
1 tablespoons chopped Parsley
Salt And Pepper
Method
Cut four squares of alumium foil or transparent cooking film approx 10 inch by 10 inch. Lightly grease the shiny side to within 1 inch of each edge.
Cut the chicken in small serving pieces, peel the potatoes and the mushrooms.
Arrange pieces of chicken, whole potatoes, mushrooms and onions on each piece of foil, sprinkle liberally with dry white wine and pour the cultured sour cream over. Season with salt and pepper.
Fold up the foil to seal the contents, making sure the ends and seam are facing upwards. Place directly on the shelves of the oven and cook at 375 deg. for an hour.
To serve, cut a cross in the foil and fold back the corners to look like butterfly wings. Top with chopped parsley.
