Chicken A La King

Ingredients
1 3-4 lb Boiling Fowl
Carrot
Onion
Celery
Salt
Peppercorns
1/4 lb Mushrooms
Capsicum
2 oz Butter
2 level tablespoons Plain Flour
2 cups Stock
1 4 oz can Nestle's Reduced Cream

Method
Cover chicken with water, add carrot, onion, celery, peppercorns and salt. Simmer until tender. Leave to cool in stock. When cool, remove skin and bones. Reserve stock. Cut chicken into small pieces. Saute mushrooms and capsicum in butter until tender. Place vegetables to one side of pan and mix in flour. Add 1 cup stock and stir until thick and smooth - add other cup. Add chicken and simmer gently - adjust seasoning - add cream - stir until smooth.
