Chicken With Peanuts

Ingredients
Onion
Peanut Butter
Butter
2 cloves Garlic
1 Chicken
1 pint Chicken Stock
3 teaspoons Peanuts
1/2 teaspoon Coriander
Ground Ginger

Method

Saute minced onion in peanut butter and butter (equal parts) and 2 finely chopped garlic cloves.

Add a jointed chicken and when brown add 1 pint of chicken stock.

Mix 3 teaspoons of toasted peanuts, ground to powder, 1/2 teaspoon of pounded coriander and pinch of ground ginger.

Mix to a paste with a little of the stock then add to chicken stew.

Simmer 1/2 hour or until tender.

Serve with fried banana.
