Ingredients
1 bunch Broccoli
Slices of left over Chicken
Sauce
1 1/2 oz Butter
2 tablespoons Flour
1 chicken Stock Cube dissolved in 1 1/2 cups of water or chicken stock
2 oz Cheddar Cheese
3 dessertspoons grated Parmesan Cheese
1/4 teaspoon Salt
Pinch of Nutmeg
A good pinch of Cayenne Pepper
1/2 cup Cream or top milk
Paprika
Method
Cook broccoli in a little boiling salted water until tender. Drain. Arrange broccoli in a greased casserole and top with slices of chicken.
Sauce: Melt butter in a saucepan, add flour and cook for a few minutes. Stir in chicken stock gradually and bring to the boil. Add shredded cheese and grated parmesan, salt, nutmeg and cayenne pepper; stir until cheese melts. blend in the cream or top milk.
Pour over chicken and sprinkle with paprika. Cover, and bake in a moderate oven. 350 deg. for 20 minutes. Serve hot rolls as an accompaniment.
