Ingredients
1 basic pancake Batter
2 cups cooked minced Chicken
2 rashers Bacon
1 cup drained crushed Pineapple
1 tablespoon Plain Flour
1 tablespoon Butter
1 cup Milk
Salt
Pepper
1/2 cup chopped Chives or Spring Onion
Method
Make the pancake batter (see basic pancakes recipe) and leave to stand in the refrigerator.
Chop the bacon finely, place into a small saucepan, cook until the fat is transparent. Add the butter and allow it to melt. MIx in the flour and cook for one minute. Gradually add the milk and cook, stirring all the time until it is a thick sauce. Season with salt and pepper.
Add the minced chicken, crushed pineapple and the chopped chives or spring onion. Allow to heat through. Cook the pancakes and spoon a little of the mixture into the centre of each one and roll them up.
Alternately, for an informal get together, serve the heated chicken mixture in a fondue pan over a candle heat and serve the pancakes folded in halves ready for the filling.
