Ingredients
1 small Chicken
1 16 oz can Apricots
1 green Pepper
8 tablespoons uncooked Rice
1 tablespoon chopped Parsley
1/2 cup dry White Wine
Salt And Pepper
Method
Cut four squares of aluminium foil about 10 inches (25cm) by 10 inch. Lightly grease the shiny side with a little butter to within an inch (3cm) of the edge.
Cut the chicken in small serving pieces. Boil the rice in salted water for five minutes only, drain, place two tablespoons rice on the centre of each piece of foil.
Cover with pieces of chicken , slices of green pepper and drained apricots halves, sprinkle with chopped parsley and dry white wine. Season with salt and pepper.
Fold up the foil to seal the contents, making sure the seam and ends are facing upwards. Place directly on the oven shelves and cook at 350 deg. for an hour.
