Ingredients
5 Egg Yolks
4 Egg Whites
5 heaped tablespoons Sugar
Few tablespoons Cocoa
500 g Mascarpone
1/2 cup Cognac
500 g Savoiardi Biscuit Fingers
1 cup Coffee and
1/2 cup Marsala mixed
Method
Beat the yolks with the sugar, beat separately the whites until light and fluffy and combine both with the mascarpone and cognac in a large bowl. Put the coffee-marsala in a separate bowl and dip the biscuit fingers, then place them on a tray. Cover with a layer of the cheese mixture, another layer of biscuits, cover again and repeat a third time. The last layer must be of cheese.
Sprinkle cocoa over it and leave in the refrigerator for at least six hours, then slice and serve. It should satisfy about six people.
A simpler, though equally delicious recipe is mascarpone with liqueur.
