Cheese Souffle

Ingredients
2 teaspoons Butter
2 teaspoons Flour
4 oz grated Cheese
1/2 pint hot Milk
5 Egg Yolks
6 Egg Whites
Salt And Pepper

Method

Melt butter, add flour, mix to a paste.

Add hot milk and cook sauce.

Remove from heat, add yolks alternately with cheese.

Mix and return to heat.

Cook till cheese melts.

Add salt and pepper - let cool slightly.

Beat egg whites stiffly.

Fold carefully into warm cheese mixture.

Put mixture into buttered dish.

Bake in preheated oven (350F) for 35-40 minutes.

Remarks
Garlic croutons = an interesting addition.
