Candied Citrus Peel

Ingredients
Any or all of Grapefruit Peel or
Orange Peel or
Lemon Peel or
Mandarin Peel
3 cups Sugar
1 cup Water
Castor Sugar

Method

Grapefruit, orange, lemon and mandarin peel can be used (thicker skinned fruit is best). Soak the skins in strong salt and water over night.

Strain and cover with fresh water and bring to the boil. Then pour water off and reheat with fresh water and bring to the boil twice more, when skins are cool enough to handle, cut them into eatable shapes and slices.

Make a heavy syrup with 3 cups of sugar to 1 cup water, heat until the sugar is dissolved. Drop in sliced peel and boil until tender.

Pour off the syrup and dry pieces on a grid or rack in a low heat oven.

Roll in castor sugar and put in air tight jars.

Delicious with coffee or just to nibble.
