Lemon Cream Pie

Ingredients
6 inch Crumb Crust
3 Egg Yolks
6 oz Butter
1 cup Sugar
2 Lemons juice and rind
Pinch of Salt
1 teaspoon Gelatine
1/2 pint Cream
1 tablespoon cold Water
Toasted slivered Almonds

Method

Soften gelatine in cold water. Combine beaten egg yolks, sugar, butter, lemon rind and juice, salt and softened gelatine in top of a double sauce bin. Cook over simmering water, stirring until mixture thickens slightly. Allow to cool, pour into prepared case - chill.

Just before serving, pipe cream which has been whipped and sweetened, to cover top of pie, sprinkle with toasted slivered almonds.

Remarks
Appears on men Mrs Beeton's Lemon Pie $2.20 (with almonds, eggs, lemons and cream) Probably not the authentic version here, but does contain all the important elements. Also 6.7.77 at $2.50
