Recipe from Station
The request for the recipe for Warbreccan cake continues to create a great amount of interest among readers.
This week W.J.N. (South Yarra) sent in an interesting letter regarding this cake, for which she said she had the original recipe.
"Warbreccan Station is outside Deniliquin in the Riverina," she writes.
:The cake was originally invented by the housekeeper there more than 50 years ago, to economise in eggs," she continued.
"Two cakes were made - one with the yolks of eggs and the other with the whites.
"It became a very popular cake in the district," says W.J.N., "and everyone asked for the recipe, which became known as Warbreccan Cake."
Here is her recipe.
Ingredients
2 cups Flour
1 cup Sugar
1 cup Milk
3/4 cup Butter
1 teaspoon Bicarbonate Of Soda
2 teaspoons Cream Of Tartar
4 Eggs whites in one cake yolks in the other
Method
Put bicarbonate of soda in milk, cream of tartar in flour.
Mix sugar and butter to a cream with the hand, then add white of eggs (or yolks), previously well beaten, then milk, then flour, and a little essence of vanilla. Put in an oblong tin lined with greased paper. Bake in a steady oven for about half an hour, then try with a straw.
If large cakes are required the materials may be doubled.
This quantity halved makes two medium-sized cakes. Any icing may be used, but originally the cakes were eaten separately, not put together with filling.
