Orange Curd
Preamble
Ingredients
3 Oranges
5 oz lump Sugar
3 oz Margarine
2 Eggs
Method
Wash and dry oranges. Rub sugar lumps over orange skins until they have soaked up the oil, then grate off rest of peel finely. Squeeze out and strain juice.
Put juice, sugar lumps, grated orange rind and margarine into saucepan. Stir over low heat until sugar is dissolved and margarine melted. Pour mixture on to lightly beaten eggs in bowl. Return to pan and cook gently, stirring, for a few minutes until mixture thickens. Pot up in clean, dry jars. Seal.

Makes about 3/4 lbs.
