Marzipan Fruits
Preamble
"Gifts from the kitchen don't ahve to be folksy jars of jams or pickles. They can be sophisticated, utterly luxurious - a decanter holding apricots in cognac; a delicate poreclain sweet dish filled with marzipan fruits; glass jars in pretty colours holding fresh cream fudge for the friend with a sweet tooth or smoky devilled almonds, a favourite with everyone; traditional Christmas cakes and biscuits; brandied marzipan dates."
Ingredients
8 oz (2 cups) Ground Almonds
1 lb pure Icing Sugar sifted
1 small Egg beaten
2 tablespoons Sherry
1/4 teaspoon Almond Essence
1 teaspoon Vanilla Essence
Method
Europe's expensive Christmas confection, but fresher and moister than the imported variety because you've made it yourself.
Combine ground almonds and icing sugar in a large bowl. Mix all the other ingredients together and add at once, kneading firmly to a smooth consistency. Wrap in plastic food wrap or store in a plastic bag until ready to shape the fruit.
Take walnut sized balls of marzipan and shape them into apples, pears, bananas, apricots, peaches. You may colour the marzipan right through by working in a very little food colouring at a time until the right shade is achieved, or you may paint the moulded fruits with food colouring.
Red Apples:
Best formed with untinted marzipan and a blush painted on with diluted red food colouring. Shape into a ball, flatten top and bottom slightly and insert whole cloves to represent stem and blossom end.
Green Apples:
It is advisable to colour the marzipan a very pale green throughout. Add a tiny droplet of colour at a time and work it well in before adding more. Shape and finish as for red apples.
Pear:
Mould untinted marzipan to a pear shape, insert cloves for stem and blossom end and paint whole pear with yellow food colouring. On one side, paint a blush with red food colouring diluted with water. Leave to dry.
Bananas:
Shape bananas with yellow tinted marzipan or plain marzipan which can be painted over with yellow food colouring. Melted dark chocolate streaked on here and there give a realisitc look of ripe bananas. Dip one end in chocolate if liked.
Peaches:
Mould untinted marzipan, shaping ball to a slight point at one end. Mark centre line with back of a knife. Paint with food colouring and roll in icing sugar to give 'bloom'.
Apricots:
Work a little red and yellow food colouring into marzipan to tint it an apricot colour. Make slightly smaller shapes than for peaches, mark in the same way with back of a knife, and if liked, add a little extra blush to one side with diluted red food colouring. Roll in sifted icing sugar.
Nestle a selection of marzipan fruit on a bed of shredded green tissue or cellophane in the container of your choice.
