Ideal Cheese Cake

Ingredients
6 oz shortcrust Pastry
2 tablespoons Sultanas
2 Eggs separated
4 oz Cream Cheese
4 1/2 teaspoons Sugar
Vanilla Essence
5/8 cup Nestle's evaporated Milk
Rind of 1 Lemon
2 tablespoons Lemon juice
Pinch Salt

Method

Line 8 inch sandwich tin with foil. Fold back over rim. Cover with pastry. Flute the edge, prick bottom lightly and bake for 10 minutes in hot oven.

Sprinkle sultanas over base.

Mix and beat until smooth - egg yolks, cream cheese, sugar, salt, vanilla, milk, lemon rind and juice. Fold beaten egg whites through and pour into shell.

Bake in a moderate oven for 25-20 minutes until firm. Sprinkle with nutmeg.

Cool and serve.
