Custard Sauce

Preamble

Ingredients
3 Egg Yolks
1 pinch Salt
1/4 cup Sugar
2 cups Milk scalded
1 tablespoon Vanilla or Brandy to taste

Method
Beat egg yolks, salt and sugar together. Gradually stir in scalded milk. Cook in double saucepan over hot water until mixture coats spoon, stirring constantly. Remove from heat, add vanilla.
