Chocolate Sauce

Ingredients
1/2 pint Water
2 oz Chocolate
Sugar to taste

Method

Break up the chocolate, put into a pan with a little of the water and melt very slowly.

Add the remaining water and sugar and, when dissolved, allow to simmer with the lid off for 10-15 minutes, or until the mixture is syrupy.

To make Rich Chocolate Sauce use the same method with the following ingredients:

1/2 pint water

6 oz chocolate

4 oz granulated chocolate

Orange Curd Patisserie; Sauce, Stock, Garnish - Concentrated orange curd incoporating butter & eggs
