Bacon And Pineapple Slice

Preamble

Ingredients
1 lb Shortcrust Pastry
1 packet of prepared Stuffing mix
1 can crushed Pineapple
4 oz chopped Bacon
2 tablespoons chopped Spring Onions
1 cup Syrup from the pineapple

Method

Divide the pastry into two portions. Roll thinly and put one part into a 9 inch lamington tin.

Drain the pineapple, and if the syrup does not measure one cup, then make it up with water to the quantity.

Mix in the packet of stuffing mix.

Chop the bacon and onions, and mix with the stuffing and pineapple. Spread over the pastry, cover with the remaining pastry, press down firmly.

Bake in a hot oven 400 deg. for 35-40 minutes. Serve hot or cold, cut in squares or fingers.
