Ingredients
Crepes
2 lbs Spinach pureed
Salt And Pepper
Nutmeg
Butter
1 1/2 lb Ricotta Cheese
10 Eggs
4 oz grated Parmesan Cheese
Method
Squeeze the spinach out well and mix all together. Should not be too sloppy. Spread crepes with filling and roll up and place 2 in greased white oval bakers. Sprinkle with melted butter and grated Parmesan. Heat and serve with Tomato Sauce.
