Ingredients
Juice of 12 Oranges
12 cups Sugar
12 Cinnamon Sticks
12 Cloves
Rind of Oranges cut into julienne
Rind of 6 Lemons
Peaches
Method
Make syrup with all ingredients except the peaches. Boil until reach the large thread stage, 219 degrees.
Place peeled peaches into syrup and cook 5 minutes.
Take off heat and allow peaches to cool.
Remove peaches carefully.
Reduce syrup till thick, then sieve and pour back peaches.
