Orange Alaskas

Ingredients
3 Oranges
2 tablespoons Cointreau or Grand Marnier
6 scoops Ice Cream
3 Egg whites
6 level tablespoons castor Sugar

Method

Cut each orange into halves and remove a small slice from the base to allow them to stand without rolling. Scoop out the flesh and cut into small segments, sprinkle with the liqueur and fill the orange cases.

These can stand for hours before use or can be used straight away. Place the orange halves onto a thick piece of board.

Beat the egg whites stiffly - a pinch of salt will help them to reach their peak - add the castor sugar gradually and continue to beat until it is a very thick meringue. If you want to make the meringue before the meal and hold it, then beat the meringue over hot water until it holds its shape.

To assemble:

top each orange half with a scoop of ice cream, cover the ice cream completely with a thick layer of meringue and place into a very hot oven, 475 deg., for one minute to brown the top. Serve immediately
