Ingredients
4 lb Loin Of Pork
Vegetable Oil
Oranges
Pineapple
Potatoes
1 piece Root Ginger finely grated
1/2 teaspoon Ground Allspice
1 teaspoon Coriander Seeds coarsely crushed
1 teaspoon prepared French Mustard
Grated rind of Lemon
2 cloves Garlic crushed
5 tablespoons Soy Sauce
1/4 cup fresh Lemon Juice
Method
Make marinade from the last eight ingredients and let pork stand 3 hours, basting frequently.
Cook at 190 degrees C. Baste with marinade which should be kept, but 45 minutes before the end, add orange slices and pineapple squares and turn potatoes.
