Soy Sauce
Garlic
Sesame Oil
Hot Red Chilli
Oil
1/4 cup Vinegar
Bay Leaves
Peppercorns
Shallots
Egg Yolks
Butter
Lemon
Ripe Avocado
Method
Marinate the lamb fillets in soy, garlic, sesame oil and hot red chilli. Cut into bite size. Cook in a wok in hot oil.
Boil vinegar, bay leaves, peppercorns and shallots.
Strain.
Mix in egg yolks and butter.
Then lemon
Then ripe avocado.
Blend it.
