Saddle Of Rabbit With Lettuce And Radishes

Ingredients
1.5 kilo Rabbit
1 kilo Lobster
100 grams Caul Fat
2 green Lettuces
500 grams Onion
400 grams Carrot
200 mls Red Wine from W.A.
1 bunch White Radishes
400 grams Potatoes
200 grams Flour
100 grams Cream
200 grams Butter
2 Eggs
2 Tomatoes
1 sprig Thyme Leaves
200 grams Celery
Bay Leaves
Salt And Pepper

Method

Bone the rabbit, roast the bones in 50 grams butter, put a mirepoix.

After 30 minutes, put in casserole with red wine and the water, cooked first on the stove.

Slice 50 grams onions with the lettuce and radishes, 50 grams butter and steam slowly all together.

Salt and pepper on the vegetables and on the rabbit saddle, stuff the saddle with the vegetables and roll in the caul fat and in the foil - cook with the bones for 15 minutes - slowly.

Bone the leg, slice in 2 halves and roast in butter, salt and pepper for 10 minutes. Put on the side.

Kill the lobster, take the tail and cut in 4 sections - roast slowly in butter, salt and pepper.

Grate the potatoes - 250 grams raw and 250 grams cooked, mix with 200 grams of flour and 2 eggs - salt and pepper - nutmeg, roast in clarified butter - 4 galettes or pancakes.

Finish the juice from the rabbit bones with the fresh thyme, roasted slowly the saddle.

Put on the plate in the middle the potatoes, on the top, the lobster and the leg and 2 small slices of saddle. Sauce on the plate.
