Ingredients
1 whole small John Dory or Bream between 8-12 ounces weight cleaned and scaled
7 cups Water
Tablespoon Salt
Half Lemon
2 medium sized Spring Onions
1 ounce fresh Ginger
3 tablespoons Peanut Oil
Method
Place water, salt and lemon in a heavy based pan large enough to hold the fish and with a well-fitting lid.
Bring the water to rapid boil.
Place fish in pan and put lid on.
Turn gas off.
Leave pan untouched for 10-15 minutes, depending on size of fish.
Cut spring onions and ginger into very fine julienne strips. Heat peanut oil till boiling and issuing smoke.
Take fish from pan and place on serving platter.
Season with light soy (Kikoman preferably). Place garnish of julienne of spring onion and ginger on top of fish.
Pour over the boiling oil.
Extra garnish of fresh coriander in sprigs (optional).
Steamed fish:
Steam the fish with the ginger on top
When cooked proceed as above
Remarks
Alternative method: substitute julienne of celery and lemon zest and season with salt and pepper.
