Seafood Casserole

Ingredients
1 1/2 tablespoons Butter
1/4 cup Spring Onions
2 1/2-3 tablespoons Flour
1/8 tablespoon Cayenne Pepper
1 cup Milk
4 oz Swiss Cheese
1/4 cup stuffed green Olives
12 oz Scallops
8 oz Prawns
1 can Tuna (6 1/2 oz)

Method

Melt the butter in a pan, add the chopped spring onions and saute three minutes. Remove from the hotplate and add the flour, cayenne and milk gradually.

Return to the hotplate and cook, stirring until thickened. Grate the cheese, add to the sauce and stir until melted.

Add the stuffed green olives sliced, the scallops and prawns diced, and the drained tuna in chunks and mix well.

Cook approximately 15 minutes, or until the scallops are cooked and remaining ingredients are heated through.
